~Sweet Hot Pickled Garlic~
1 1/2 lbs of garlic peeled, cloves can be used whole or cut in half
5 or so hot peppers
4 cups white vinegar
1 1/3 cups of granulated sugar
1-2 sweet red pepper – Optional
Put the vinegar & sugar together in a pan over medium heat, stirring until the sugar dissolves, then bring it to a boil and boil for about 5 minutes. Next add the garlic and hot peppers. You can also add the sweet red pepper if your using it. Put a hot pepper into the jar, add the cloves of garlic so that they are within 1″ of the top of the jar. Next add the sweet pepper if your using it. Fill the jar with the boiling sugar/vinegar mixture so that it is 1/4″ from the top of the jar. Let the air bubbles release, after that make sure the rim of the jar is clean and seal the jar.
Let the Sweet N Hot pickled garlic sit for 2 weeks or so and then open and enjoy!
